Italian Pasta Salad Recipe

It’s Summertime!!!

Summertime means back yard barbecues, pot lucks, and sharing food with friends. I’ve shared a lot of recipes I like to take when we go to barbecues, like ice cream cone cupcakes, or  my chocolate peanut butter dream mousse.

But today I want to share my all-time favorite side dish, Italian Pasta Salad. 

I love this Italian Pasta Salad because not only is it really yummy, but it’s SUPER easy to make. I usually have everything I need in my pantry, and I can make it ahead, like a whole day ahead! Now that’s a recipe I can get behind.

Ingredients:

2 cups Pasta (uncooked)
1 can sliced olives (about 3 ounces)
1/2 package pepperoni (package = about 7 ounces)
3 string cheeses, cut into slices
1/2 green pepper (optional)
1/2 red onion (optional) 
1 bottle (16 oz) zesty Italian dressing (I like Kraft)

Directions:

Boil pasta until tender. Mix in all ingredients, including dressing. Cover and place in fridge to cool. This pasta salad is best if made the day before.

  1. I love cold pasta salads. Adding to your salad………………..I like to add almost everything but the kitchen sink in mine.
    I add some seeded, chopped cucumber
    diced celery
    diced carrots
    bit of parsley
    pinch of sugar and celery salt along with alittle dill weed, salt, pepper and garlic salt.
    For really some beautiful color I use the Garden Rotini
