Strawberries and Cream Cake {recipe}

Summer is coming, and with it comes parties, barbecues, and potluck dinners. There’s nothing I love more than sitting around a bonfire, surrounded by good people and good food. And I’m always looking for good dessert recipes that are quick, easy, and sure to impress. Because while I don’t want to put a lot of work into making the food that I take to parties, you can bet I want other people to THINK I put a lot of work into it. Enter the Strawberries and Cream Cake. This cake is a cake you and your friends won’t ever forget.

This cake tastes just takes like Summer. The fresh strawberries are a perfect match for the cream cheese icing. Put it all on top of this fluffy cake, and you have a match made in heaven.

 And trust me, this beauty didn’t last long at my house. The kids devoured it, and my husband kept asking me what the occasion was.

 Because this cake is a beauty! Not only does it look gorgeous, but it tastes divine. It’s the perfect desert for those Summer birthdays, or to take along, and share with friends. This Strawberries and Cream cake is sure to impress.

You’ll need:

8 inch Yellow cake. (Use a cake mix or this recipe from Martha Stewart)
1 batch of Strawberry Sauce (1 pint strawberries, 1/2 cup sugar, 1 tsp vanilla) 
Cream Cheese Frosting (or use Betty Crocker like I did.)

Directions:

Start by baking your yellow cake, or could also use an angel food cake if you’d rather it be more like Strawberry Shortcake. I made mine in an 8 inch round pan, and had enough leftover to make another 6 inch cake.

 Place your cake, right side down, on a plate. Using a bread knife, slice your cake in half. Use about half the strawberries and smother the bottom layer with the ooey-gooey goodness.

 Then place your other layer back on top of the strawberries. So you’ve got yourself a strawberry cake sandwich.

 Now, let’s talk about frosting. If I had some cream cheese on hand, I would have made my own cream cheese frosting… But sometimes you just can’t do it all. So whenever I’m in a pinch, I use Betty Crocker’s cream cheese frosting.

 Mix your frosting with the rest of your strawberry sauce. I think it’s prettiest when it isn’t combined all the way, so you get a swirly-marbely look.

 The strawberry sauce is going to make your frosting pretty thin, and I like it that way! Just pour the frosting over top, smooth with a spatula, and let it drizzle down the edges…. mmmm.

 I kind of like it when you can see a little bit of the cake peek-a-boo through the frosting. You get to see the fluffy texture of the cake and that beautiful strawberry sauce poking through in the middle.

 In just a few minutes, you’ve got yourself a cake nobody will be able to resist. It’s an epicurean delight, that’s for sure.
