Confetti Cupcakes (made with fruity pebbles)

 Since we’ve had kids, our New Years Eve traditions have changed a lot. It’s no longer about staying up late and partying. Now we spend the evening as a family, playing games and having fun. And I’m not going to lie, but I much prefer the New Years with kids than without. It’s just so much more fun and exciting! And one of my favorite things is making fun food for my family. So this year, I’m making these confetti cupcakes with Fruity Pebbles.

Nothing screams New Years Eve like confetti. But, I’m not going to clean glitter and confetti out of my carpet on January 2nd. So I came up with the idea to use Fruity Pebbles as our confetti! We’re sprinkling it on cupcakes, using it in confetti poppers, and making Fruity Pebbles treats in the shapes of 2016.

Today I want to show you how I made these confetti cupcakes. My kids absolutely loved these, and now they’re asking for them for every special occasion, which I’m actually OK with, because they are so easy to make! By the way, do you know they make ICE CREAM pebbles now? So yummy! Think how cute these cupcakes and pebbles ice cream would be. Adorable!

I’m sure your little ones will love these too!

Ingredients:

1 cake mix, eggs, oil
Cupcake liners
Icing (I used cream cheese icing from a can)
Fruity Pebbles

Directions:

  1. Bake cupcakes according to directions on box.
  2. Once cupcakes are cooled, frost with your favorite icing.
  3. Sprinkle Fruity Pebbles over the tops of your cupcakes.
  4. ENJOY!
